Well....Christmas is over.....I know that it's supposed to be a happy time of year and all...but I am SO glad it is over!!! I love the fact that I can buy things for the kids (my brother and sister) and spend time with them and all of that.....but they sure don't make it easy! They don't even act like they appreciate the things I get them, and then they fight and argue every time they are in the same room together!!! It's SO aggravating!
Okay....so I haven't taken ANY pictures with my new camera! How CRAZY is that!? I just haven't really been in the mood for some reason....I am going to try to take some this weekend....
So...I'm kind of depressed....felt that way for more than a week, really...I don't know why.....all I wanna do is sleep....I have been more than thirty minutes late for work for the last two days because I don't want to get out of bed. I don't know what the deal is....
This is what I made for supper last night. It is called Italian Hamburger Deep Dish. It was SOOO good! Here is the recipe:
1 | pound lean ground beef |
1 | teaspoon salt |
1/8 | teaspoon pepper |
1 | garlic clove, finely chopped |
2 2/3 | cups water |
2/3 | cup milk |
1/4 | cup butter or margarine |
1 | teaspoon salt, if desired |
2 | tablespoons instant minced onion |
1 | teaspoon dried oregano leaves |
2 2/3 | cups Betty Crocker® Potato Buds® mashed potatoes (dry) |
3 | to 4 medium medium tomatoes, sliced |
4 | ounces mozzarella cheese, shredded or sliced |
1. | Heat oven to 350ºF. Grease rectangular baking dish, 11x7x1 1/2 inches. Cook beef, 1 teaspoon salt, the pepper and garlic in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. |
2. | Heat water, milk, butter, 1 teaspoon salt, the onion and oregano to boiling in saucepan. Remove from heat. Stir in dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed. Whip with fork until as fluffy as you'd like. Spread half of the potato mixture on bottom of baking dish. Layer with beef and half of the tomatoes. Top with remaining potatoes and tomatoes; sprinkle with cheese. |
3. | Bake uncovered about 30 minutes or until hot and bubbly. |
High Altitude (3500-6500 ft) Bake about 35 minutes. |
I just have to say that I LOVED it! AND BOTH kids loved it, which is a real surprise because my sister is REALLY picky!!! My brother will eat anything...but my sister is a problem eater! I was a little worried about it when I was putting the mashed potatoes in the pan, because they were kind of dry and sticky...but once it was baked it turned out GREAT!!! I used diced tomatoes (out of a can) instead of sliced ones, and large chopped onion instead of minced (for the ones who wanted to pick it out! lol!), and I used cheddar instead of mozzerella cheese.....it was GREAT!!!!!!!!!!!! I will DEFINITELY be making it again!!!

Ok I have been MIA the last two days Sorry your feeling so down :( I actually have been too...maybe it's this weather and another year close to come and gone. I sure hope you use that camera soon ;)
